- 12 Oreo Cookies (I used reduced-fat)
- 1-8oz. package cream cheese, at room temperature (I used reduced-fat)
- 1/4 cup sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1/4 cup chopped pecans
- 1/4 cup mini chocolate chips
- 1/2 cup store-bought caramel sauce
Preheat oven to 325 degrees. Line a muffin tin with paper liners. Place one Oreo cookie in the bottom of each tin.
In a large bowl, combine cream cheese and sugar together until smooth. Stir in egg and vanilla; mix until it’s lump-free. Spoon cheesecake batter over Oreos evenly. Depending on the size of your muffin tins, you should get anywhere from 9-12 individual cheesecakes. I was able to get ten from this recipe with my pan.
Top with pecans and mini chocolate chips. Bake 15 minutes or until completely set. Coll. Can be refrigerated for 24 hours. Serve at room temperature. Spoon caramel sauce over cheesecakes before serving.
