A couple weeks ago, one lady from my knitting group baked and brought these little gems to our weekly meeting. She bakes a lot, and brings cookies or brownies almost every week. Listen up: these were the best cookies she had ever made, and skyrocketed into my top five cookies. Ever. It might have something to do with the cup of butter or the mascarpone cheese. They certainly give this cookie a fantastic texture and flavor. Unless you abhor Oreo cookies, you will NOT be sorry you made these. I highly suggest that you make them and bring them to others immediately, unless you don’t mind eating all of them!

- 1 cup butter
- 3 oz. mascarpone cheese
- 1 cup sugar
- 1 egg yolk
- 2 1/2 cups flour
- 1 t. vanilla
- 8 crushed Oreo cookies (or more, to taste)
Preheat oven to 325 degrees.
Cream the butter and mascarpone cheese for about 3 minutes. Slowly beat in the sugar until light and fluffy. Beat in the egg yolk and vanilla, then slowly add the flour until mixed. Stir in crushed Oreo cookies. Scoop or spoon cookie dough onto a cookie sheet. Bake for 12-15 minutes until golden around the edges.
